Sweet Tea Pie

Yesterday was a rare occurence - I actually had the chance to watch a program on the Food Network before dinner. The kids were with their GiGi at the pool and Hubby was cooking on the grill. So I put my feet up on the couch, glass of wine in-hand and watched "Paula's Best Dishes." It was quite the treat.


I know some folks can't stand Paula, but when I was on maternity leave - in both 2005 and 2007 - I became a bit addicted to her show on the Food Network. I would feed the babies and watch the programs, wishing I had kitchens like Paula and Ina and the ability to cook delictible dishes. So, cut to August 2012 and Paula is cooking with special guest, Martha Hall Foose. How I luuuuuvv Martha, or as Paula calls her, "Mawtha." (I much prefer the Missisippi Martha to that Martha up north.) I've written about Martha in the past and her role as food stylist for the film, "The Help." That reminds me, I need to remember to add her cookbook to my Christmas list...


Anyhoo, Paula and Martha were making Martha's famous Sweet Tea Pie, or "Sweetie Pie." I sooo want to try this now. Have you had it? Do you own any of Martha's cookbooks? Here's the recipe, courtesy of Garden & Gun magazine.

Sweet Tea Pie

Pastry for a 9-inch single crust pie (store bought or basic pie crust)

2 cups sugar1 cup butter, softened8 egg yolks3/4 cup strong steeped tea, at room temperature1 tablespoon freshly squeezed lemon juice1 teaspoon grated lemon zest2 tablespoons all-purpose flour1 1/2 teaspoons cornmeal1/2 teaspoon salt
Heat the oven to 350 degrees F. Line a 0-inch pie pan with crust and then crimp the edges decoratively.

In a large bowl, beat the sugar and butter on medium speed until light and fluffy. Add the egg yolks 1 by 1, beating well each time. With the mixer off, add the tea, lemon juice, and zest, and beat on medium speed to mix them in well. Add the flour, cornmeal, and salt, and use a fork or a whisk to stir them in evenly and well.

Pour the filling into the crust and place it on the bottom shelf of the oven. Bake until the edges puff up and the center is fairly firm, wiggling only a little when you gently nudge the pan, about 45 minutes.

Place the pie on a cooling rack or a folded kitchen towel and let cool to room temperature.

Still here...

In case you've been wondering if I fell off the face of the earth, rest assured that I'm still alive and kicking.

Work and home have been all-consuming lately, so I've had very little time for anything else.

So, I'll leave you with this question: What are some of your favorite things about fall? A few of mine are:

  6. Sitting around the firepit at night

When I Grow Up, I Want to Be...

Last night, I asked my five-year old what he wants to be when he grows up. He said a doctor. When I asked him what kind, he said, "A good one."

That's my boy.

Meanwhile, Miss E. said she wants to be a librarian or a vet, but she prefers that you call it a veterinarian. Yes, ma'am.

If both of our kids pursue careers in science or anything beyond my scope as an English major, I'm afraid I won't be able to help them much. 


Yeah, that about sums it up for me.

And Off They Go...

Today was an emotional day for me. My baby started kindergarten, my eldest, second grade.



Little Man did so well this morning, but when it came time to gather around his teacher and head to his classroom, he buried himself in my lap and started to cry. Heartbreaking for this mommy. So, the teacher recommended that Hubby walk him upstairs with the group and I stay behind. She said sometimes it's harder to say goodbye to the mom than the dad. So, I hid in the crowd and watched him leave. I stayed with Miss E. who is now an old pro at this first-day-of-school thing. In fact, I think she was ready for me to leave!

I took the day off yesterday to spend it with the kids. We enjoyed one last day of summer vacation at the swimming pool after running errands, which included dropping off yet another check at school.

And so it begins...

A New Beginning

Summer vacation is coming to a close for my kids. School starts next week and soon volleyball and soccer will replace swimming as the sports of choice. The weather is even cooling down a bit. After a scorching-hot summer, today it's a pleasant 80 degrees with no humidity. Thank you, God.

Yesterday was a bittersweet day for our family.


Our baby finished his last day of preschool/daycare. With our two kids, we've been at this nurturing place for seven years. We had to say goodbye yesterday and that was tough. I'm thrilled that our kids are starting new chapters in their lives, but it pulled on my heartstrings, realizing that my baby is bound for kindergarten.

He and Miss E. met their new teachers last night at their grade school. They're both looking forward to the school year, although Little Man was a bit quiet throughout the event. He's usually very boisterous, so I'm sure the many changes taking place have him a little anxious. But, he'll be fine and I'm sure he will adore his teacher and make plenty of new friends. Meanwhile, Miss E. walked in her second-grade classroom like she owned it. Our one-time shy girl is coming into her own.

So, for those of you with kiddos returning to school or for those who are teachers prepping for a new school year, enjoy these last few precious days of summer. And remember the good news: fall is approaching and that means football season is upon us. Enjoy the tailgates, my friends!

Peace

I've been MIA due to projects at work, life with two active kids, etc., etc. You all know the drill. You live it, too.

But, as we head into one of the busiest times of year with the start of a new school year, fall sports, new commitments and money flowing out of your palm like water, it's always good to remember to "get your calm on." That's right. Find your inner peace. Your happy place. Take a deep breath and say, "I can do this." And be thankful that you can, in fact, do this. It can be hard, believe me. But, I'm trying to have a more positive outlook and one can't do this unless there's a certain level of inner-peace. It's just not possible.


As we say each week in church, "Peace be with you." I hope you encounter some moments of peace and calm this week.

Runner Girl


The other night I started a 5k training program sponsored by a local running store and New Balance. I’m excited that I’m getting serious about a running routine and taking this proactive step. The leader of the group (and store-owner) is a fun guy and the volunteer coaches are great folks. Plus, one of the best parts is the store is very close to where my grandparents lived. So, the workouts involve running through a wonderful old neighborhood that holds many fond memories for me.

Of course, by meeting at this running store, I found myself drawn to the bright colors of the clothing, running shoes and other shiny, feel-good runner-gear. Good thing I didn’t have my wallet on me. There were plenty of the oval stickers and car magnets in stock, too, promoting one’s love of running or celebrating the accomplishment of a half-marathon, marathon or triathlon. I see them EVERYWHERE, to the point that sometimes it makes me wonder, "Who isn't running a marathon these days??"



Then, I saw this one online and it made me laugh out loud.

Not that this is the case for me anymore, but I love the snarkiness of it. ;)
